What’s Inside

Bake with Brooki features all of the most famous Brooki Bakehouse recipes, plus all my favourite recipes I grew up baking in Australia. The book is designed to be an easy starting point for new bakers, with 100 recipes cover to cover. I wrote this book to remind you that anyone can bake (including you!) And the only way to learn is to start somewhere and work up your courage to keep trying and learning new things.

Cookies — The recipes that started it all. The chunky, bakery-style cookies that went viral and the variations that came after them. My absolute favourite recipe in this section is the New York Cookies. These cookies feature dark chocolate chips, walnut chunks and a delicious buttery cookie dough that holds its shape in the oven.

Brownies and BlondiesIf the cookie chapter is where it all started, the brownies and blondies chapter is where things get properly indulgent. These are the recipes for the days when you need something deeply chocolatey, impossibly fudgy, and completely unapologetic about it. My absolute favourite in this section is the best ever brownies. They’re even better gluten free (trust me!)

Cakes — Cakes are the chapter closest to my heart, because a cake means something is being celebrated. Whether it’s a birthday, a gathering, or a Tuesday that deserves to be treated like an occasion, these are the recipes that make a moment feel significant. 

Cupcakes — Everything a cake promises, delivered in individual form and therefore completely guilt-free to eat three of. The cupcakes in this chapter are bakery-style — tall frosting, proper flavour all the way through, the kind that actually taste as good as they look. My absolute favourite in this section is Hummingbird Cupcakes, originating in Jamaica and packed with flavour — pineapple, pecans, spices, delicious.

Cheesecakes — Cheesecakes are the recipe I get asked about more than almost anything else — because when they go right, there is nothing better, and when they go wrong, it’s genuinely heartbreaking. This chapter covers both baked and no-bake, and I’ve written every recipe so you know exactly what you’re getting before you open the oven. My absolute favourite in this section is the Basque Burnt Cheesecake. Simple, extremely quick to make, and so ridiculously creamy in every bite.

Slices — Slices are the great Australian baking tradition, and this chapter is a love letter to them. The beauty of a slice is in its honesty — no fuss, no special equipment, just layers of something delicious that you cut into squares and share. My absolute favourite in this section is the jelly slice, because my mum used to make it for me almost every week. In the community I grew up in slices were almost an essential item to take as a house guest, so I’ve eaten my fair share of slices over the years (but continue the tradition at home willingly!)

Macarons — Macarons have a reputation for being difficult, and I won’t pretend there isn’t a learning curve — but I’ve spent years breaking down exactly where things go wrong and how to fix them, and this chapter contains everything I know. Follow these recipes carefully and your first batch will genuinely surprise you. My absolute favourite in this section is the salted caramel macarons. I have eaten so many of these before breakfast during my time as a bakery owner that I genuinely think my body is part salted caramel macaron in its make up.

Desserts — The desserts chapter is where I got to play. These are the recipes that sit somewhere between everyday baking and a proper restaurant-style finish — impressive enough for a dinner party, achievable enough for a home kitchen. My absolute favourite in this section is my sticky date pudding. I’ve been making this recipe since I was about sixteen years old and I dare say its the best sticky date pudding recipe you’ll find (with a generous dose of butterscotch sauce, of course!)

Gifts for Friends — Some of the best things you can bake aren’t for yourself — they’re for the people who show up for you. This chapter is full of recipes designed to be packaged, gifted, and delivered with a handwritten note.

Sauces, Fillings & Frostings — The recipes that make every other recipe better. A good buttercream, a proper caramel, a fruit curd that’s worth making from scratch — these are the building blocks that turn something homemade into something bakery-quality.
